what are those things?

these are called smithing templates added in 1.20
there are 2 types of smithing templates: armor trim templates and netherite upgrade templates
both can be used in smithing table (crafted with 2 iron ingot and 4 wood planks)
armor trim templates decorates ur armor
netherite upgrade templates upgrades ur dim armor, tools and weapons to netherite
